For the Oats Payasam

  • 1 tbsp Clarified Butter or ghee
  • 1/2 cup Oats
  • 3 cups Full Fat Milk
  • 1/2 cup Sugar
  • 3-4 nos Cardamom pods

For the Mango Puree

  • 1 nos Mango roughly chopped
  • 1/2 cup Sugar
  • 1/4 cup Water

For Cooking Oats

  • In a pan, take some ghee add the oats and dry roast it until fragrant.
  • Add the milk until the oats is cooked and starts thickening and becomes creamy about 12-15 mins. Keep stirring in between so that the oats doesn't stick to the bottom.
  • Add sugar to it. And heat for 2 more mins until the sugar melts and everything combines together.
  • Switch off the gas. Crush the cardamom pods to make a powder and add this to the oats and mix.

For Mango puree

  • While the oats is cooking; in a separate pan add the mangoes, sugar and water and cook until mango softens and thickens.
  • Let it cool and grind coarsely.
  • In the serving dish; add your oats payasam, top with mango puree and garnish with some chopped nuts of your choice.
