Vanilla Cupcakes is a very basic cupcake recipe that every baker must know. The blueberry filling adds moistness to the soft and fluffy cupcakes

  • 190 gms Plain flour
  • 140 gms Caster sugar
  • 140 gms Butter Softened or Conditioned
  • 2 nos Eggs
  • 2 ml Vanilla Extract
  • 40 ml Milk Warmed
  • 5 gms Baking Powder
  1. Cream soften butter and sugar until light in colour and soft and fluffy

  2. Whisk together eggs and vanilla and warm to approx. 23°C. Add egg to batter in 4-5 stages with the last stage being added slowly. Scrap bowl throughout every stage.

  3. Gently fold in sieved dry ingredients. Add in the warmed milk and mix through completely. Refer my video for exact stages

  4. Bake in a preheated oven at 180°C for 15 mins or in a pre-heated pressure cooker for 20-22 mins.
