These Tiktok's 3 ingredients Blueberry Muffins recipe are a breeze to make. With just 3 ingredients and 5 mins of Prep Work you will be able to make a spongy and soft muffins easily.
In a mixing bowl, add the softened ice-cream and using the back of your wooden spoon just smash it form a semi-solid or soft serve kind of consistency. The ice-cream should neither be melted not frozen solid.
Add in the self-rising flour and mix until you could still see some bits of flour remaining.
At this stage, add the blueberries and combine until just mixed. If you could still see some bits of flour remaining it is totally fine.
Scoop and divide the batter evenly between 6 parchment paper cups or cupcake liners. You can bake it directly in the muffin tin too just remember to grease it before adding the batter.
Then bake in the preheated oven of 180°C for 30-35 mins or until a skewer inserted in the centre comes out clean.
Let it sit in the muffin tin itself for few mins then un mould to a wire rack and let it cool completely.

Since ice-cream is responsible for bringing the moistness and sweetness in the recipe, make sure to use a good quality brand.
The ice-cream has to be at the right consistency. Too liquidy then the batter would become to runny. If frozen then you won't be able to prepare the muffin batter itself. Using a spoon to smash the ice-cream does the trick. Get it to a semi-solid consistency.
You can make your own self-rising flour.For one cup of self-rising flour you would need to combine a cup of flour and 1.5 tsp of baking powder and 1/4 tsp salt. Whisk them together and use as needed.
At no cost, over-mix the batter. If you see some bits of flour left out it is ok. But over-mixing would result in tough muffins.
Line the muffin tray with parchment paper cups or cupcake liners for easy unmoulding.
Adding lemon zest and lemon glaze would further enhance the taste of the muffins.
My Personal Verdict:Since ice-cream is the only form of sweetness in the recipe, I found it to be on a little lesser side. To combat that I would recommend you add 2 tsp of lemon zest along with blueberries before baking.After baking and when ready to serve just drizzle some lemon glaze on top. Trust me after this step the muffins taste was elevated to the next level.Prepare the lemon glaze by combining 2 tbsp icing sugar with few drops of lemon juice. Technically this would make it 5 ingredients muffins recipe if you choose to add the glaze on top. Please note that it was not mentioned in the original recipe, this is just my take on the recipe. So definitely try the recipe but do remember to glaze it.
