Learn how to make fruit cobbler with ease using this versatile recipe that accommodates fresh, frozen, canned or mixed fruits for a delicious dessert experience.
Pre heat oven to 375°F (190°C). A baking dish (such as a 9x9 inch square baking dish, 9x13 inch or a similar size) is best for the recipe.
Combine the sliced or diced fruit with 1/2 cup of sugar, lemon juice, cornstarch or flour, and ground cinnamon (if using) until the fruit is evenly coated, in the baking dish and spread it out into an even layer.
In another bowl, prepare the top crust. Combine the all-purpose flour, sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until a thick batter forms.
Drop spoonfuls of the cobbler batter on top of the fruit filling in the baking dish, spreading it out as evenly as possible. Leave small gaps between the spoonfuls for the fruit juices to bubble through.
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the fruit is bubbly and the cobbler topping is golden brown and cooked through.
Once baked, remove the cobbler from the oven and let it cool slightly before serving. You can serve it warm or at room temperature, optionally topped with a scoop of ice cream or a dollop of homemade whipped cream.
Notes
Substitutions: Cornflour also known as cornstarch can be substituted with all purpose flour. Ground cinnamon is optional; can be substituted for any other spices like cardamom or all spice.

Also, drain the juices from canned fruits and use only the fruits. Today I am using strawberries, blueberries, blackberries and apples.
