Whip up quick and easy lemon popsicles with just 4 ingredients in this simple easy-to-follow DIY recipe, perfect for beating the heat on hot summer days.
In a pitcher, combine water, sugar, salt, and freshly squeezed lemon juice. Stir until the sugar is fully dissolved. Perform a taste test and adjust the sweetness or tartness according to your preference for that perfect balance.
Divide the mixture evenly between 6 popsicle molds, leaving room at the top of the mold for expansion during freezing.
If your popsicle molds come with sticks, simply insert the sticks into each mold and freeze for 6 hours or overnight until the popsicles are frozen and set.
If using separate wooden skewers, cover the popsicle molds with aluminum foil and freeze for 3 hours. After 3 hours, remove the molds from the freezer and insert wooden skewers into each popsicle. Return the molds to the freezer and continue freezing for another 3 hours or until the popsicles are solid.
To unmold the popsicles, run warm water over the outside of the molds for a few seconds.
Gently remove the popsicles from the molds and serve immediately.

Notes
Use Fresh Lemons: Opt for fresh lemons rather than bottled lemon juice for the best lemon flavor.
Balance Sweetness: Adjust the amount of sugar according to your taste preferences. Taste the lemonade mixture before freezing.
Add Zest: Consider adding lemon zest to the mixture for an extra burst of citrus flavor. The zest contains essential oils that enhance the lemony taste of the popsicles.
Allow for Expansion: Leave a small space at the top of each popsicle mold before inserting the sticks. This extra space allows the liquid to expand as it freezes without overflowing.
Pre-Freeze Before Inserting Sticks: For molds without popsicle sticks, freeze the popsicles for about 3 hours before inserting wooden skewers. This helps prevent tilting and ensures the sticks stay in place.
Be Patient: It can be tempting to check on the popsicles frequently, but refrain from removing them from the freezer too soon. Allow them to freeze for at least 4-6 hours, or preferably overnight, for the best results.
Run Under Warm Water: When ready to serve, run the bottom of the popsicle molds under warm water for a few seconds to help release the popsicles easily.
Experiment with Flavors: Once you've mastered the basic lemonade popsicle recipe, don't be afraid to get creative! Try adding other fresh fruit like strawberries or raspberries for unique flavor combinations.
