Instructions
In a small bowl, mix together peanut butter, honey, and vanilla extract until smooth.
In a large bowl, gently crush the corn flakes with your hands.
Pour the peanut butter mixture over the cornflakes and stir until well coated.
Line a square pan with parchment paper. Press the mixture firmly and evenly into the pan.
Melt the chopped chocolate or chocolate chips in a microwave-safe bowl or using a double boiler.
Pour the melted chocolate over the cornflake layer and spread evenly.
Refrigerate for 1–2 hours, or until set.
Once firm, remove from the pan and cut into squares. Serve chilled or at room temperature.
Notes
For best results, use creamy peanut butter. If using natural peanut butter, make sure it’s well-stirred and not too runny.
Lightly crushing the corn flakes helps the bars stick together better and gives a denser texture.
Store in an airtight container in the refrigerator for up to 1 week.
To make ahead for parties or gifting, wrap individual bars in parchment paper and keep chilled until ready to serve.
Cutting Tip: Use a sharp knife to cut into 8 bars for a more filling portion, or 16 small squares for bite-sized treats.
Serving tip: These are best served as a snack or treat rather than breakfast. Ideal for school snacks, afternoon cravings, or mini dessert squares.
