If using spice mix garnishing, combine the salt and chilli powder in a small bowl and set aside for later.
n a blender, combine the pineapple chunks, water, sugar, lemon juice and pineapple esence if using into smooth puree. Taste the mixture and adjust sweetness if needed by adding more sugar.
Strain the pineapple puree.
Pour the strained pineapple mixture into popsicle molds leaving some room on top of the mold for expansion while freezing.
Insert popsicle stick into the molds. Freeze for at least 4-6 hours, or until solid. If using separate wooden skewers, cover the popsicle molds with aluminum foil and freeze for 3 hours. After 3 hours, remove the molds from the freezer and insert wooden skewers into each popsicle. Return the molds to the freezer and continue freezing for another 3 hours or until the popsicles are solid.
Once frozen, remove the popsicles from the molds by running warm water over the outside of the molds for a few seconds to loosen them. Sprinkle the prepared spice mix if using and serve immediately.

The weight of pineapple when converted into cups can vary depending on factors like the size of the pineapple pieces and how densely they're packed. However, as a rough estimate, 2 cups of diced pineapple typically weigh around 320 grams. So you can use 2 cups of pineapple chunks if you prefer to use cup measurements.
Preparing spice mix is optional. Chilli powder in spice mix can be substituted with kashmiri red chili powder or even cayenne pepper for less heat.
Choose Ripe Pineapple for the best flavor. Look for fruit with a golden-yellow color and a sweet aroma.
Always taste the pineapple mixture before freezing and adjust the sweetness if needed by adding more sugar.
