    This no-bake wonder demands minimal and simple ingredients, likely sitting in your pantry. Whether covered in luscious chocolate or not, these tasty bites promise an equally delightful experience that's effortlessly achievable in your kitchen.

    Is it Safe to eat Raw Cookie Dough?

    Eating raw dough can be risky because it might have raw eggs and untreated or raw flour, which can carry harmful bacteria. 

    Salmonella in Raw eggs can make you sick, and untreated flour might have contaminants. 

    That's why the recipe I'm sharing is super safe – no eggs at all, yes you heard me right it is an eggless cookie dough and we're making the flour safe by heating it.

    So, you can enjoy cookie dough without any worries!

    This is the same recipe that I use to make our favorite eggless chocolate chip cookies that have received so many 5-star rating ever since it was published.

    How to Heat Treat the Flour?

    Heat-treating flour is easy!  You've got three options: oven, microwave, or stovetop. 

    And guess what? You can do it in advance and stash it in an airtight container to save time.

    Oven Method:

    1. Spread the flour on a baking sheet and pop it in the oven at 350°F (175°C) for about 5 minutes, stirring halfway through.
    2. Allow it to cool before using in your recipe.

    Microwave Method:

    1. Place the flour in a microwave-safe bowl, and microwave on high in 30-second intervals for 1-2 mins, stirring in between until the flour reaches 165°F (74°C).
    2. Let it cool before incorporating it into your recipe.

    Stovetop Method:

    1. Heat a dry skillet over medium heat.
    2. Add the flour and stir continuously for 5 minutes or until the flour reaches 165°F (74°C).
    3. Allow it to cool before using in your recipe.

    My go-to is the microwave method—it's quick and easy! This little heat-treated flour trick ensures your flour is safe to use in recipes like our tasty edible cookie dough bites. 

    Ingredients

    • Butter - Use room temperature butter. I prefer using unsalted butter but if using salted butter then skip the salt in the recipe.
    • Sugar - We need two types of sugar here, just like a classic chocolate chip cookie recipe - brown sugar adds a caramelized flavor to the recipe. You can skip caster sugar and use all brown sugar and vice-versa as well. 
    • Chocolate chips - Use mini chocolate chips for this recipe (dark, milk or white chocolate chips will work but not the regular chocolate chips), or you can skip chocolate chips and add any other add-ons like MandM's or sprinkles if desired.

    Step by Step Tutorial

    1. Prep the Dough:In a microwave safe bowl, put your flour. Microwave it for 1-2 minutes, stirring every 30 seconds. Let it cool.

    In another bowl, cream together butter, caster sugar, and brown sugar until it's creamy, pale, and smooth using a hand mixer for about 5-6 mins (image 1).

    Add vanilla extract and mix again (image 2).

    By the way, you can also do this in the bowl of a stand mixer attached with a paddle attachment.

    Toss in the flour and salt, beat until it forms a nice dough. Mix in the chocolate chips using a spatula (image 3).

    Scoop out 2 teaspoons of dough or use a mini ice cream scoop (image 4).

    Roll it into a smooth ball with an even surface (image 5).

    Pop them in a bowl arranged in a single layer and chill in the fridge for 5 minutes (image 6).

    The cookie dough balls is now ready to be enjoyed but lets make it a little fancy.

    Presenting Cookie Dough Truffles: Melt some chocolate in a bowl; could be dark, milk or white chocolate. You can use the microwave or stove-top, but my favorite is the instant pot melted chocolate hack.

    Take each dough ball, dip it in the melted chocolate, lift it with a fork, and tap off any extra chocolate (image 7).

    Place it on a cookie sheet lined with parchment paper (image 8).

    Do one at a time. Stick the chocolate covered cookie dough balls in the fridge for 5 minutes.

    Enjoy them as they are or get creative! I topped mine with a drizzle of melted chocolate and a sprinkle of sea salt (image 9).

    Storage Instructions

    Store your delicious cookie dough balls in an airtight container in the refrigerator. 

    They'll stay fresh for up to a week, allowing you to indulge in your cookie dough cravings whenever you please.

    Freezing Instructions:

    If you want to save some for later, freezing is a fantastic option. 

    • Place the cookie dough balls on a baking tray, ensuring they're not touching each other.
    • Stick the tray in the freezer until the balls are solid.
    • Then, transfer them to a freezer bag, ziploc bag, or container.
    • They can be frozen for up to three months.

    Thawing Instructions:

    When you're ready to enjoy your frozen cookie dough balls, simply move them from the freezer to the refrigerator.

    Let them thaw overnight for the best texture. If you're in a hurry, you can thaw them at room temperature for about 30 minutes.

    Baker's Tips

    • Ensure all your ingredients are at room temperature, especially the butter. It makes the mixing process smoother.
    • Follow the suggested flour heating methods (microwave, oven, or stovetop) to make it safe for consumption. Cool the flour completely before proceeding to make the chocolate chip cookie dough bites.
    • Mixing the butter and sugar thoroughly is crucial; they're the glue holding our dough together without any added liquids. If the dough feels dry, just add a little milk gradually until it comes together perfectly.
    • Use high-quality vanilla extract for a more intense and flavorful cookie dough. Talking about flavors, this no bake cookie dough bites can be amped by adding additional flavors like peanut butter, almond butter, or cashew butter. 
    • This recipe can be made vegan by swapping butter for vegan butter
    • Chilling the dough in the refrigerator for at least 5 minutes helps it firm up, making it easier to handle and coat with chocolate. 
    • Use a consistent measure, like a mini ice cream scoop or tsp to ensure uniform-sized dough balls.
    • Feel free to customize your cookie dough truffles with different toppings like crushed nuts, sprinkles, or coconut flakes.

    Frequently Asked Questions

    Can I use regular flour without heating it?

    It's recommended to heat treat the flour to eliminate any potential bacteria. However, if you prefer not to heat treat, consider using heat-treated or pasteurized flour. Or substitute with other flours like oat flour or almond flour. 

    How long should I cream the butter and sugars?

    Cream the butter and sugars until the mixture is creamy, pale, and smooth, usually taking 5-6 minutes with an electric mixer.

    How do I prevent the chocolate from clumping during melting?

    1. Make sure that the chocolate is within the expiry date.
    2. The water in the saucepan should be simmering and not boiling if you double-boiler method. Stir the mixture at 15-second intervals in the microwave.
    3. Allow the chocolate to cool a bit before dipping the cookie dough balls.

    Why did my cookie dough turn too soft?

    Chilling the dough is crucial. If it's too soft, refrigerate it for a bit longer to firm up before shaping the balls.

    Can I skip the chilling step before coating the chocolate?

    Chilling the dough before coating helps it maintain its shape. Skipping this step might result in misshapen or soft truffles.

    Ingredients

    • 1 cup Plain Flour
    • 6 tbsp (84 gms) Unsalted Butter softened
    • 3 tbsp (38 gms) Caster Sugar
    • 3 tbsp (38 gms) Brown Sugar
    • 1 tsp Vanilla Extract
    • pinch of salt
    • 1/3 cup (66 gms) Chocolate chips

    Instructions

    Heat Treat Flour
