Which Chocolate to Use?
When making coffee truffles, it's best to use high-quality chocolate with a cocoa content of around 60-70%.
This level of cocoa content strikes a balance between sweetness and bitterness, complementing the coffee flavor while providing a rich and creamy texture.

Apart from this, you can use your own favorite chocolates that you prefer eating too.
I shall be using a combination of Van Houtten dark and milk chocolate for this recipe.

Ingredients:
- Chocolate - I am using a combination of Van Houtten dark and milk chocolate for this recipe. And compound dark chocolate for the outer coating of the dark chocolate coffee truffles. You can also use white chocolate for coating if you prefer.
- Coffee - For strong coffee flavor, filter coffee works best. If not available you can use instant coffee powder too.
- Cream - Both heavy cream and half and half would work for this recipe.
- Butter - Use unsalted butter
- Salt - is an optional ingredient used to garnish on top of the truffles

Step by Step Instructions:
Step 1: Brew the Coffee:
Start by brewing a strong cup of coffee using your preferred high-quality coffee brand. Allow it to cool to room temperature.
Alternatively, you can also use instant coffee powder; the instructions for the same shall also be shared.
Step 2: Prepare the Truffle Filling:
- Image 1: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
- Stir in 2-3 tablespoons of strong brewed coffee. At this stage, it might seem that the mixture is about to curdle but keep mixing and it will come together.
- Image 2: Remove the saucepan from the heat and pour it over the finely chopped chocolate. Let it sit for a minute to melt the chocolate.
- Stir the chocolate and coffee cream mixture until it's smooth and well combined. If the chocolate is not fully melted you can put the pan back on low heat and mix until combined.
- Image 3: Add the butter and stir until it's fully incorporated into the mixture.
- Do a taste test and adjust the amount to your taste for a stronger coffee flavor. Mix well.
- If using coffee granules add it to the hot cream first so that it gets a chance to dissolve faster.
Step 3: Chill the Mixture:
Image 4: Pour the truffle filling into a bowl and cover it with plastic wrap, ensuring the plastic wrap touches the surface of the filling to prevent a skin from forming.
Refrigerate the chocolate mixture for at least 1-2 hours or until it's firm enough to handle.
Step 4: Shape the Truffles
Image 4: Once the mixture has chilled and firmed up, use a cookie scoop, spoon or a melon baller to scoop out small portions of the mixture.
I am using 2 tsp to make one coffee truffle. Chill the mixture for 5 mins.
Roll each portion into a small ball with your hands. You can wear food-safe gloves to prevent sticking. Place the balls on a baking tray and chill for 5 mins.
Roll the balls one last time to form a smooth top.
Step 5: Coat the Truffles:
Roll each truffle in melted chocolate or cocoa powder, powdered sugar, or finely chopped nuts to coat them.
I am using dark compound chocolate to coat the truffles. You can use white for a contrast in colour if desired.
Place the coated truffles on a baking sheet lined with parchment paper and let them set for about 15-20 minutes.

- 4-5 tbsp Coffee Concoction
- 226 gms (8 oz) Chocolate
- 2 tbsp Butter unsalted

Brew the Coffee
- Start by brewing a strong coffee using your preferred high-quality coffee brand. Allow it to cool to room temperature.
Prepare the Truffle Filling:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

- Once the mixture has chilled and firmed up, use a cookie scoop, spoon, or a melon baller to scoop out small portions of the mixture on a baking tray lined with parchment paper. I used 2 tsp of truffle mixture to make one coffee truffle.
- Place the baking tray in the refrigerator to chill for 15 mins.
- Roll each portion into a small ball with your hands. You can dust your hands with some cocoa powder to prevent sticking.
- Place the balls back on the baking tray and chill again for another 5 mins.
- Finally roll the balls one last time to smoothen the surface
Coat the Truffles:
- Roll each truffle in melted chocolate. Garnish with some sea salt, nuts or coffee beans.
