These 3-ingredient Peanut Butter Stuffed Dates are so easy and crazy delicious! They are like a nutty version of chocolate-covered dates. Make them for an easy healthy snack or dessert! Involves no cooking or baking 😀

These dates filled with peanut butter and dipped in chocolate are also the perfect healthy treat ( that is if you can stop at one ;)). They’re sweet and filling, but not full of sugar.
I recommend making these for:

- As a gift for friends, family members or coworkers that love chocolate and yet are following a healthy diet.
Ingredients
- 10 Medjool dates
- 1/3 cup Peanut butter
- 1/2 cup melted dark chocolate
- Sea salt (optional)
- Gold leaf (optional)
You just need 3 simple ingredients to satisfy your sweet craving with this addictive combination of whole dates and nutty peanut butter.
How to Choose Dates
Before you start making the recipe, make sure you choose the best dates for this recipe.
When choosing dates at the store, look for plump, glossy and unbroken skin. Dates should be dark brown or almost black in colour and not too dry and hard.
I prefer using Medjool Dates for this recipe but any other fresh dates would work too.
Instructions
- Remove the pit from each date by cutting a slit through 1 side using a sharp knife and pulling out the pit.
- Fill the sliced dates with about a spoonful of peanut butter (to me the more the better), then reshape into an oval if you can by gently pressing them together.
You can consider stopping at this stage too if you prefer as in the image above. The 2 ingredients peanut butter stuffed dates taste delicious too.
Just top it with some crushed nuts and you are done!!
Or you can proceed further like I did to cover it with melted chocolate
- Dip stuffed dates in melted chocolate, one at a time, shaking off excess chocolate before placing them on a baking sheet lined with parchment paper.
- You can melt chocolate using the double boiler method or try my favourite way of melting them in the Instant Pot.
- Allow the chocolate to set completely.
- As a final step decorate them with gold leaf, drizzle with melted chocolate on top and a sprinkle of sea salt or some salted chopped peanuts for the crunch.
Garnishing the chocolate covered peanut butter stuffed dates is totally optional and you can leave them plain if you prefer.

Storing Instructions
These treats can be stored in the fridge for up to two weeks or frozen in a ziplock bag for up to three months. If you live somewhere that gets hot, refrigerating is best as these are soft and melty if left at room temperature.
If you do want to store them at room temperature, keep them in an airtight container on the counter away from direct sunlight. They should be just fine like this for up to a week.
Variations
Some tasty variations you can make include:
- Substitute creamy peanut butter with almond butter, cashew butter, sunflower seed butter or any other nut/seed butter of choice.
- In place of smooth peanut butter, you can also use crunchy peanut butter.
- Try a different flavour of chocolate such as white chocolate or semi-sweet chocolate.
- Stuff dates with whipped cream, ganache or a mixture of cream cheese and sugar for a delicious fruit and cheese treat.
- Add a little cocoa powder to make chocolate peanut butter and use it as stuffing.

- Do not slit the dates all throughout or you will have two halves left out and no space to fill the dates.
- Use natural peanut butter to make it a much healthier treat.
- You can consider adding little coconut oil to melted chocolate to make it look glossier.

Ingredients
- 10 Medjool Dates
- 1/3 cup Peanut Butter
- 1/2 cup Melted Chocolate
- Gold Leaf and Sea Salt for garnishing optional
Instructions
- Pit the Dates: Slice the dates halfway through using a sharp knife and remove the seed from within.
- Stuff the Dates: Fill the dates with about a teaspoon of peanut butter or more depending upon the size of dates.
- Dip the Dates: Dip the stuffed dates in melted chocolate and lay on parchment paper to set.
- Garnish: Once set garnish the dates with edible gold leaf, drizzle of melted chocolate and sea salt.
