About Air Fryer Banana Bread recipe
Banana Bread is a type of quick bread that is made using ripe bananas and that's how it gets its name. Crispy on the outside and soft and light in texture from within, a quick bread recipe needs just basic pantry staple ingredients.
Apart from being egg-free and dairy-free, this recipe can be made using just a bowl and spatula.
And the best part - baked in an air fryer!!

Ingredients needed:
- Bananas - This is no brainer right!! But the catch is to use over-ripe bananas to lend the moistness and sweetness to the recipe.
- Milk - Use dairy free milk like almond milk or oat milk to make this recipe dairy free.
- Walnuts - Adding add-ons like Nuts or choco chips is optional but gives a nice texture to the cake.
Step by Step Instructions:
- In a bowl mash the bananas and add the sugar, oil, milk and vanilla. Whisk to combine everything (image 1-2).
- Place a sieve on top add the dry ingredients - flour reserving about a tbsp of it, baking powder, baking soda and salt (image 3). Sieve them together. Combine using a spatula.
- Add the chopped walnuts to the reserved flour and coat it well (image 4).
- Then add it to the bowl and combine everything to a cake batter like consistency.
- Transfer the batter to a 6 inch cake pan that is buttered and pre-lined with a parchment paper (image 5).
- Pre-heat the air fryer at 180°C for 3-5 mins. Place the cake pan in the pre-heated air fryer and bake at 180° for 20 mins (image 6).
- After 20 mins open the air fryer, place an aluminium foil on top of the cake and bake for another 5-8 mins or until a skewer inserted in the centre comes out clean (image 7).
- Once baked, carefully remove the cake pan. Let the cake sit in the cake pan for another 3-4 mins (image 8) then invert on to a wire rack to cool completely before slicing and serving.
I bet this air fryer banana bread without eggs is going to become your comfort recipe but the key here is to use ripe bananas which keeps the bread soft and moist.
But, How Ripe the Bananas should be for making Banana Bread?
The riper the better. The skin of the bananas should literally be black as seen in the ingredients image above or at the least should have nice black feckles all around.
Simply leave the bananas on your counter-top to ripen or you can keep it in the rice bag overnight to ripen or as a quick alternative microwave the bananas in bursts of 30 seconds.

Storage Instructions:
Once cooled store the vegan banana bread in an air tight container for up to 2 days on your kitchen counter and up to 5 days in the refrigerator.
Can we freeze this Banana Bread made in the Air Fryer?
Yes absolutely. Once cooled cling wrap the cake well and then freeze for up to 2 months.
When ready to eat, thaw it overnight in the refrigerator or in the microwave for few seconds.
Baker's Tips:
- Please use over-ripe bananas for this recipe. If your banana is not ripe then you can consider using this microwave tip to ripen your bananas quickly.
- Ensure to chop the walnuts well and coat it with flour so that you get an even dispersement of the same once baked.

Bake the bread until the sides of the bread are crisp and a skewer inserted in the centre comes out clean. Since sometimes baking in the air fryer can cause too much browning on top I prefer placing an aluminium foil on top towards the final 10 mins of baking to stop it from browning too much. Another point to note is that if your bananas are very ripe then due to excess moisture it might take another additional 1 to 2 mins for you to bake the bread than what the recipe calls for.
Adding spices is a great way to do so. My family is not a big fan of cinnamon so I have not included in the recipe. But adding 1tsp of cinnamon would truly enhance the flavour. You can also consider adding all spice or ginger powder to bring that holiday vibes.

Air Fryer Banana Bread - Egg-free and Dairy-Free
Ingredients
- 1 banana, mashed (comes to 1/2 cup mashed bananas)
- 1/2 cup (100 gms) Sugar
- 3 tbsp Oil
- 2 tbsp Milk refer notes
- 1/2 tsp Vanilla
- 1 cup (120 gms) APF/Maida
- 3/4 tsp Baking powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 cup (30 gms) Walnuts
Instructions
- In a bowl mash the bananas and add the sugar, oil, milk and vanilla. Whisk to combine everything.
- Place a sieve on top and add the dry ingredients - flour (reserving about a tbsp of it), baking powder, baking soda and salt. Sieve them together.
- Combine to form a cake batter. And when you could still see some bits of flour left in the batter that is when you add the walnuts but do remember to coat the walnuts with the reserved flour and then add.
- Fold to form the cake batter and then transfer it to a pre-lined 6 inch cake pan. Smoothen the top and sprinkle more chopped walnuts on top if you like.
- Pre-heat the air fryer at 180°C for 3-5 mins.
- Place the cake pan in the pre-heated air fryer and bake at 180° for 20 mins.
- After 20 mins open the air fryer, place an aluminium foil on top of the cake and bake for another 5-8 mins or until a skewer inserted in the centre comes out clean.

Maida flour is not commonly sold in U.S. markets. Can common baking flour or even bread flour be substituted?

Hi GeoC.. APF stands for All Purpose Flour or Plain Flour which I believe is easily available in US markets.. You can use that.. 🙂 Hope this helps 🙂
