I am so very excited for this year.. Did you know this is the very first year where I have actually written down my resolutions and following it (atleast till now).. This is the year when I have planned to fulfil my bucket-list and this is the year when I am starting up with a new venture towards achieving my ultimate career goal (P.S. I will update about it in a month's time when everything comes together)..
One such resolution or say bucket-list is to spend more quality time with my family and especially with YO.. I just don't want to miss any growing phase of hers.. She has started walking.. How cool is that.. (I know thats the most natural thing but a new mom's excitement is obvious here right!!!)

So today's post combines all that I blabbered right above. No patience to read it no problem just grab a sandwich, the orange juice and fresh berries and enjoy with your loved ones..
Oh which one would you like??
I have three options for you..
1. Cream cheese Sandwich
2. Caramalized Onion Coleslaw Sandwich and
3. Boondi-Raita Sandwich (my personal favourite)
The best part of these sandwiches is the addition of raw veggies. So basically no cooking means moms you can relax and yet feed your kids or yourselves some healthy treat.
The first time I had Coleslaw at our holiday visit, I fell in love with it and since then using it in any way I could and this Sandwich is also a version of it.
The Boondi Raita Sandwich is inspired by the classic Indian dip made from Cucumber and Yoghurt. Just add boondi right before serving to retain its crunchiness.

Well before you wonder whether I am gonna share the recipe or not then here it is..
Cold Sandwich - 3 Interesting Ideas
Ingredients
Cream Cheese Sandwich
- 150 gms cream cheese
- 1/4 onion finely chopped
- 1/2 a carrot grated
- 1 tbsp finely chopped coriander leaves
- salt, pepper and chilli flakes to taste
Caramalized Onion Coleslaw Sandwich
- 1 cup shredded purple cabbage
- 1/2 a carrot grated
- 3 tbsp caramalized onion flavoured mayonnaise
- salt, pepper and chilli flakes to taste
Boondi Raita Sandwich (my personal favourite)
- 125 gms greek yoghurt
- 1/4 cucumber grated
- 1/4 cup boondi
- 1/4 tsp cumin powder (or to taste)
- 1/2 tsp chaat masala powder (or to taste)
- 1/4 tsp sugar
- 1/4 tsp red chilli powder (or to taste)
- 1 tbsp finely chopped coriander leaves
- salt to taste
Instructions
Cream Cheese Sandwich
- Combine all the ingredients mentioned in the list and keep aside.
- Take 2 bread slices. apply the cream cheese filling in between and enjoy.
Caramalized Onion Coleslaw Sandwich
- Just combine everything mentioned in the list. Apply it in between two bread slices and enjoy
Boondi-Raita Sandwich
- Combine all ingredients mentioned in the list except for boondi. Do a taste test to adjust the spice mix. Add boondi right before serving. Enjoy it in between two slices of bread
Notes
2. If you are vegetarian just use eggless mayo in this recipe to make it Coleslaw sandwich.
3. Add boondi right before serving to keep its crunchiness intact.
