    Mango Cheesecake Smoothie - yet another dessert inspired breakfast

    Do you know who is the first love of my life?? February is all about love with Valentine's Day around the corner..

    So guess guess!!!

    The first love of my life is MANGOES (lol!!! :P).. Oh my gosh!!! Can't just describe how much I love mangoes.. Mumbai, Maharashtra (India) is famous for Alphonso Mangoes; so juicy so tender and so so aromatic; the only reason for which I used to look up to summers in India. Not only me but I am sure all Indians just love Mangoes...

    And then when I tasted cheesecake here in NZ, I just loved it..

    So when we combine Mangoes + Cheesecake it is one freaking combination.

    But to be honest with you all; the true flavours of this Mango Cheesecake comes from sweet, ripe juicy mangoes. And unfortunately I could not find some good fresh mangoes here.. 🙁 So I had to sweeten this up with some extra flavours. But if you are lucky enough to find good quality mangoes then just skip some sweetener in it.

    So don't know whether the mangoes disappointed me or was it the gloomy weather, somehow I am not satisfied with the pictures for this post today.. Had I been not on this #7daysmoothiechallenge I would have repeated the recipe some other day to get that one amazing drool-worthy image of this Mango Cheesecake Smoothie.

    I am so glad that I took up this challenge. I know I am repeating it in each and every post but can't stop appreciating the flavour combinations that I tried.. I mean imagine Black Forest Cake inspired Smoothie?? or Pina Colada Smoothie packed with protein?? You might have heard about it but I had never.

    This smoothie recipe also calls for almond milk but I guess cashew milk would have tasted even better. What do you think??

    And then since it is cheesecake inspired used cream cheese here, mangoes of course for the flavouring, banana for sweetening it up and instead of graham crackers used Parle-G biscuits (lol.. its an Indian biscuit).

    And since I could not find good quality mangoes (meanwhile.. check out this no churn mango ice-cream you will go crazy for it..) here used vanilla bean to sweeten it up even more but that is optional.

    Oh yeah!!! Totally forgot about Tofu!! I know cheesecake recipes does not make use of Tofu but then I added it for you know increasing the protein quotient.

    So I can say this smoothie inspired by Mango Cheesecake is much healthier than the cake in itself..

    Mango Cheesecake Smoothie

    This smoothie is inspired by the classic mango cheesecake minus all the extra calories.
    Course Breakfast, Dessert, Drinks
    Cuisine American
    Prep Time 5 minutes minutes
    Cook Time 5 minutes minutes
    Total Time 10 minutes minutes
    Servings 2 people

    Ingredients

    • 1 cup almond milk unsweetened
    • 1 sweet ripe mango cut into chunks
    • 1 banana
    • 1/2 cup tofu cubed
    • 1/4 cup oats
    • 2 tbsp cream cheese
    • 1 tbsp crushed biscuit (used Parle G)
    • 1/4 tsp lime jest
    • 2 tsp lime juice
    • 1 tsp grated ginger
    • 2 dates
    • 1/4 tsp turmeric powder
    • 1 vanilla pod or 1 tsp vanilla extract (optional)

    Instructions

    • Add all the ingredients mentioned in the above order to the blender (scrape out seeds from vanilla and then add) and blend until smooth
    • Garnish with lime wedge and mint leaves and chia seeds.

    Notes

    1. I added vanilla because my mango were not sweet but you can skip that if yours is a sweet ripe mango
    2. Make it vegan by using cashew cream cheese.
