    Love it or Hate it.. Tiktok recipes are worth a try.. These 3 ingredients Blueberry Muffins recipe is talk of the town now!! Just 3 ingredients, 1 bowl and 5 mins prep work is all you need.

    What is Tiktok Blueberry Muffins?

    Shared by influencer Barbara Costello, these 3 ingredient Muffins recipe is internet's next favourite recipe. Made using just 3 ingredients - IceCream, Flour and Blueberries these muffins recipe is a breeze to make.

    Why try this recipe?

    1. Needless to say whipping up the batter is a breeze. Totally effortless.
    2. 3 ingredients, 1 bowl and just 5 min prep work. Can you ask more in a baking recipe?
    3. Comes out light, spongy and soft once baked.
    4. Can be frozen for up to a month.

    When it comes to TikTok recipes we always have this one burning question.. Is it really good and worthy enough to try?? I have shared my personal experience in the recipe card so definitely check that out.

    Ingredients needed:

    1. Ice-Cream: Egg based (Custard) Ice-Cream works best for this recipe. But you can use any other variety of ice-cream too. I have used Eggless Vanilla Ice-Cream making the recipe suitable for everyone.
    2. Self-Rising Flour - You can substitute it with regular flour. But you will have to add baking powder to the recipe then.
    3. Blueberries - Fresh or frozen; both works well.

    Step by Step Tutorial

    In a mixing bowl, take the ice-cream and smash it using the back of your wooden spoon to form a semi-solid or soft serve kind of consistency (image 1-2).

    Add in the self-rising flour. Give it a mix (image 3-4). And when you still see some bits of flour left out that is when you add your blueberries (image 4-5).

    Combine everything until just mixed (image 6).

    Transfer it to a muffin pan lined with parchment paper cups or cupcake liners.

    Or you can also directly bake it in the muffin pan itself. Just remember to grease it with oil before adding the batter so that it is easy to unmould the muffins once baked.

    Divide the batter between 6 cupcake liners and bake in a pre-heated oven of 180°C for 30-35 mins or until a skewer inserted in the centre comes out clean.

    How easy was that right??

    That is the best part of Tiktok recipes then be it Chocolate Pop it, Baked Oats or Baked Pasta - all the recipes shared on the platform are super easy to make.

    Allow it to sit in the pan itself for few mins before transferring it to wire rack to cool completely.

    Storage Instructions:

    Once cooled, stored in an air tight container at room temperature for 2 days.

    You can also freeze them for up to a month. Before serving warm in the microwave for few seconds.

    Baker's Tips:

    1. The ice-cream has to be at the right consistency. Too liquidy then the batter would become to runny. If frozen then you won't be able to prepare the muffin batter itself.
    2. Using a spoon to smash the ice-cream does the trick. Get it to a semi-solid consistency.
    3. At no cost, over-mix the batter. If you see some bits of flour left out it is ok. But over-mixing would result in tough muffins.
    4. Line the muffin tray with parchment paper cups or cupcake liners for easy unmoulding.
    5. Adding lemon zest and lemon glaze would further enhance the taste of the muffins.

    Recipe FAQ's

    The recipe seems so simple to be true. Is it worth trying?

    Just like any other muffins, these also turn out to be spongy, soft and light. However since ice-cream is the only form of sweetener in this recipe, I felt the recipe to be lacking a bit of sweetness which can be adjusted by adding a simple lemon glaze on top. More on that in the recipe card.

    Which ice-cream works the best?

    Use your favourite brand of vanilla ice-cream. If you consume eggs, then I would recommend you go for custard (egg based) Vanilla Ice-Cream for optimum results.

    My muffins turned out to be tough. Why so?

    You might have over-mixed the batter. Mix until it is just combined. It is ok to see few bits of flour in the batter. Feel free to download this ebook that has more baking tips and tricks.

    Can I replace blueberries with something else?

    Yes I think the recipe should work with any other berries of choice. Even nuts or chocolate chips should work. But bear in mind that berries tend their own sweetness or tartness to the recipe so if using anything else you might have to use sugar syrup to go on top.

    These Tiktok's 3 ingredients Blueberry Muffins recipe are a breeze to make. With just 3 ingredients and 5 mins of Prep Work you will be able to make a spongy and soft muffins easily.

    Ingredients

    • 255 gms (1 + 1/3 cups) Vanilla Ice-Cream softened
    • 120 gms (1 cup) Self-rising flour
    • 1/2 cup Blueberries (fresh or frozen)

    Instructions

    • In a mixing bowl, add the softened ice-cream and using the back of your wooden spoon just smash it form a semi-solid or soft serve kind of consistency. The ice-cream should neither be melted not frozen solid.

    • Add in the self-rising flour and mix until you could still see some bits of flour remaining.
    • At this stage, add the blueberries and combine until just mixed. If you could still see some bits of flour remaining it is totally fine.
    • Scoop and divide the batter evenly between 6 parchment paper cups or cupcake liners. You can bake it directly in the muffin tin too just remember to grease it before adding the batter.
    • Then bake in the preheated oven of 180°C for 30-35 mins or until a skewer inserted in the centre comes out clean.
    • Let it sit in the muffin tin itself for few mins then un mould to a wire rack and let it cool completely.

    1. Since ice-cream is responsible for bringing the moistness and sweetness in the recipe, make sure to use a good quality brand. 
    2. The ice-cream has to be at the right consistency. Too liquidy then the batter would become to runny. If frozen then you won't be able to prepare the muffin batter itself. Using a spoon to smash the ice-cream does the trick. Get it to a semi-solid consistency.
    3. You can make your own self-rising flour.For one cup of self-rising flour you would need to combine a cup of flour and 1.5 tsp of baking powder and 1/4 tsp salt. Whisk them together and use as needed.
    4. At no cost, over-mix the batter. If you see some bits of flour left out it is ok. But over-mixing would result in tough muffins.
    5. Line the muffin tray with parchment paper cups or cupcake liners for easy unmoulding.
    6. Adding lemon zest and lemon glaze would further enhance the taste of the muffins.
    My Personal Verdict:
    Since ice-cream is the only form of sweetness in the recipe, I found it to be on a little lesser side. To combat that I would recommend you add 2 tsp of lemon zest along with blueberries before baking.
    After baking and when ready to serve just drizzle some lemon glaze on top. Trust me after this step the muffins taste was elevated to the next level.
    Prepare the lemon glaze by combining 2 tbsp icing sugar with few drops of lemon juice. Technically this would make it 5 ingredients muffins recipe if you choose to add the glaze on top. 
    Please note that it was not mentioned in the original recipe, this is just my take on the recipe. 
    So definitely try the recipe but do remember to glaze it.
